Using locally sourced hardwoods, primarily Manuka wood and depending on the type of meat to be slow-smoked, a combination of oak, ironbark, Macadamia, Cherry and Apple woods. Our purpose-built smokehouse located in South Gippsland, Victoria and processing facility combines time-honoured methods with world’s best practice smoking technology. We operate under Food Standards of Australia guidelines; with a strict HACCP (Hazard Analysis and Critical Control Point) system, ensuring the strictest hygienic handling regimes.
